INGREDIENT SPECIFICATIONS

Product Description:                 Sour Cherry Concentrate is the syrupy liquid obtained from the vacuum concentrating of pressed sour cherries. The product is prepared in accordance with good manufacturing practices under strict sanitary conditions. The juice is filtered clear prior to evaporation.

           

 

Quality Standards:

 

1. Brix                                      65 Brix

 

2. pH                                       2.8 - 3.6

 

3. Acidity                                 4.6 - 6.8% expressed as malic acid

 

4. Ratio                                    9 to 14

 

After reconstituting the Sour Cherry Concentrate to 14 Brix, the juice will meet the following criteria:

 

5. Color                                   clear, red with no brownish notes

 

6. Flavor                                  characteristic sour cherry with no cooked or fermented

7. Pectin                                   negative

                                                alcohol precipitation test

 

8. Ash                                      3.0 - 4.6 gr/l

 

9. Potassium                             1,500 - 2,300 mg/l

 

10. Yeast                                 Maximum 1,000/ml
