Product Description:                 Red Raspberry Concentrate is the syrupy liquid obtained from the vacuum concentrating of pressed red raspberry juice. The product is prepared in accordance with good manufacturing practices under strict sanitary conditions. The juice is filtered clear prior to evaporation.

1. Brix                                      65 Brix

 

2. pH                                       2.7 - 3.3

 

3. Acidity                                 10 - 14% expressed as citric acid

 

4. Ratio                                    4.6 to 6.5

 

After reconstituting the Red Raspberry Concentrate to 8 Brix, the juice will meet the following criteria:

 

5. Color                                   clear, red with no brownish notes

 

6. Flavor                                  characteristic red raspberry with no cooked or fermented
