INGREDIENT SPECIFICATIONS

Product Description:                 Red Currant Concentrate is the syrupy liquid obtained from the vacuum concentrating of pressed red currant juice. The product is prepared in accordance with good manufacturing practices under strict sanitary conditions. The juice is filtered clear prior to evaporation.

           

 

Quality Standards:

 

1. Brix                                      65 Brix

 

2. pH                                       2.8 - 3.4

 

3. Acidity                                 12 - 17% expressed as citric acid

 

4. Ratio                                    3.8 to 5.4

 

After reconstituting the Red Currant Concentrate to 10.5 Brix, the juice will meet the following criteria:

 

5. Color                                   clear, red with no brownish notes

 

6. Flavor                                  characteristic red currant with no cooked or fermented

8. Ash                                      3.6 - 5.5 gr/l

 

9. Potassium                             1,800 - 2,400 mg/l
