INGREDIENT SPECIFICATIONS

Product Description:                 Pear  Juice Concentrate is produced by concentration of pear juice, obtained from the pressing of washed, fresh pears.

           

Quality Standards:

 

1. Brix                                      70 +/- 1, determined by refractometer at 20 Celsius

 

2. pH                                       3.2 - 3.9

                                               

3. Acidity                                 1.3 - 2.8% expressed as malic acid

                                               

4. Ratio                                    25 to 53

 

After reconstituting the Pear Concentrate to 12 Brix, the juice will meet the following criteria:

 

5. Color                                   As compared to Color Standards for Honey established by the U.S. Department of Agriculture, color will be White to Extra White. In addition, the color will be clear with no hazy or cloudy characteristics.

 

6. Organoleptic                         Typical pear flavor, not burned, caramelized or fermented and free from any off odors              

                                             

7. Pectin                                   negative, alcohol precipitation test

                                               

8. Ash                                      1.9 - 2.6 gr/l

 

9. Sucrose                                Maximum 25 gr/l

 

10. Glucose/Fructose ratio        0.2 - 0.4

 

11. Yeast                                 Maximum 1,000/ml

 

12. Formol Value                     2.2 - 3.7 ml/n/o in 100 ml

 

13. Potassium                           900 - 1,400 mg/l
