Product Description:                 Elderberry Concentrate is the syrupy liquid obtained from

                                                the vacuum concentrating of pressed elderberry juice. The

                                                product is prepared in accordance with good manufacturing

                                    practices under strict sanitary conditions. The juice is

                                    filtered clear prior to evaporation.

 

Quality Standards:

 

1. Brix                                      65 Brix

 

2. pH                                       3.1 - 3.7

 

3. Acidity                                 3.2 - 6.0% expressed as citric acid

 

4. Ratio                                    11 to 20

 

After reconstituting the Elderberry Concentrate to 11 Brix, the juice will meet the following criteria:

6. Flavor                                  characteristic elderberry with no cooked or fermented notes

 

7. Pectin                                   negative

8. Ash                                      4.8 - 7.2 gr/l

10. Yeast                                 Maximum 1,000/ml
