INGREDIENT SPECIFICATIONS

Product Description:                 Cranberry Concentrate (Vaccinium Oxycoccus) is the syrupy liquid obtained from the vacuum concentrating of pressed cranberry juice. The product is prepared in accordance with good manufacturing practices under strict sanitary conditions. The juice is filtered clear prior to evaporation.

           

 

Quality Standards:

 

1. Brix                                      65 Brix

 

2. pH                                       2.2 - 3.0

 

3. Acidity                                 15 - 22% expressed as citric acid

 

4. Ratio                                    3 to 4.3

 

After reconstituting the Cranberry Concentrate to 7.5 Brix, the juice will meet the following criteria:

6. Flavor                                  characteristic cranberry with no cooked or fermented notes

                                              

7. Pectin                                   negative

                                                alcohol precipitation test

 

8. Ash                                      1.4 - 2.6 gr/l

 

9. Potassium                             700 - 1,300 mg/l

 

10. Yeast                                 Maximum 1,000/ml
