INGREDIENT SPECIFICATIONS

Product Description:                 Blueberry Concentrate is the syrupy liquid obtained from the vacuum concentrating of pressed blueberry juice. The product is prepared in accordance with good manufacturing practices under strict sanitary conditions. The juice is filtered clear prior to evaporation.

           

 

Quality Standards:

 

1. Brix                                      65 Brix

 

2. pH                                       2.5 - 3.0

 

3. Acidity                                 4.2 - 6.4% expressed as citric acid

 

4. Ratio                                    10 to 15

 

After reconstituting the Blueberry Concentrate to 10 Brix, the juice will meet the following criteria:

 

5. Color                                   clear, dark blue, typical for blueberries

 

6. Flavor                                  characteristic blueberry with no cooked or fermented

7. Pectin                                   negative

                                                alcohol precipitation test

 

8. Ash                                      3.0 - 4.6 gr/l

 

9. Potassium                             1,500 - 2,300 mg/l

 

10. Yeast                                 Maximum 1,000/ml
