INGREDIENT SPECIFICATIONS

 

Product Description:                 Blackberry Concentrate is the syrupy liquid obtained from

                                                the vacuum concentrating of pressed blackberry juice. The

                                                product is prepared in accordance with good manufacturing

                                    practices under strict sanitary conditions. The juice is

                                    filtered clear prior to evaporation.

 

Quality Standards:

 

1. Brix                                      65 Brix

 

2. pH                                       3.0 - 3.6

 

3. Acidity                                 5.0 - 9.0% expressed as citric acid

 

4. Ratio                                    7 to 13

 

After reconstituting the Blackberry Concentrate to 10.0 Brix, the juice will meet the following criteria:

6. Flavor                                  characteristic blackberry with no cooked or fermented notes

 

7. Pectin                                   negative

                                                alcohol precipitation test

 

8. Ash                                      3.4 - 4.2 gr/l

 

9. Potassium                             1,300 - 1,800 mg/l

 

10. Yeast                                 Maximum 1,000/ml
