INGREDIENT SPECIFICATIONS

Product Description:                 Black Currant Concentrate is the syrupy liquid obtained from the vacuum concentrating of pressed black currant juice. The product is prepared in accordance with good manufacturing practices under strict sanitary conditions. The juice is filtered clear prior to evaporation.

           

 

Quality Standards:

 

1. Brix                                      65 Brix

 

2. pH                                       2.8 - 3.4

 

3. Acidity                                 12.0 - 16.0% expressed as citric acid

 

4. Ratio                                    4 to 5.4

 

After reconstituting the Black Currant Concentrate to 11.0 Brix, the juice will meet the following criteria:

 

5. Color                                   clear, red with no brownish notes

 

6. Flavor                                  characteristic black currant with no cooked or fermented

                                              notes

 

7. Pectin                                   negative

                                                alcohol precipitation test

 

8. Ash                                      5.2 - 7.4 gr/l

 

9. Potassium                             2,000 - 2,700 mg/l

 

10. Yeast                                 Maximum 1,000/ml
