INGREDIENT SPECIFICATIONS

Product Description:                 Apple Juice Concentrate is produced by concentration of apple juice, obtained from the pressing of washed, fresh apples which are free of alar and added preservatives.

           

Quality Standards:

 

1. Brix                                      70 +/- 1, determined by refractometer at 20 Celsius

After reconstituting the Apple Concentrate to 12 Brix, the juice will meet the following criteria:

 

5. Color                                   As compared to Color Standards for Honey established by the U.S. Department of Agriculture, color will be White to Water White. In addition, the color will be clear with no hazy or cloudy characteristics.

 

6. Organoleptic                         Typical apple flavor, not burned, caramelized or fermented and free from any off odors             

                                             

7. Pectin                                   negative, alcohol precipitation test

                                               

8. Ash                                      1.9 - 2.5 gr/l

 

9. Sucrose                                Maximum 2.7%

 

10. Fructose/Glucose ratio        1.6 - 2.4
